Kicking into its third year, Bison Bar & BBQ is delighted to announce that it’s free two-day BBQ and Whiskey Bonanza is back for another year this June 9th and 10th, in partnership with our pals at Jameson Black Barrel.
This two-day FREE BBQ Festival, spread across Dublin’s original BBQ restaurant, Bison Bar & BBQ, and The Workman’s Club, is set to be the perfect kick off to the summer, with a jam-packed schedule of seriously delicious BBQ action, Whiskey experiences, live music, games, competitions and more coming your way. Saddle up and head on into Bison Bar & BBQ on 11 Wellington Quay to experience the serious taste of Ireland’s original and best barbeque this side of the Lone Star State.
Limited edition tasting plates of our signature Bison dishes will be available, from pulled pork and marinated BBQ halloumi to succulent brisket. We wanted to go even bigger again this year! Bison Fest will be hosted by Adam Purnell a.k.a. Shropshire Lad, who has established himself as a leading ‘live fire’ chef in the UK since establishing his You Tube channel and sharing this passion for BBQ over 5 years ago. He has since gone on to build a career in food, notably winning Heston Blumenthal’s show ‘Crazy Delicious’ on Netflix, and appearing as a critic on MasterChef the Professionals. Adam will be hosting a live cooking demonstration, sharing his unique BBQ cooking techniques. His style is to ‘not mess about’, using the best ingredients and allowing bold, natural flavours to collide – something Bison has been doing since we first opened our doors back in 2012.
As well as this, we’ve rounded up some of the best in the business to put on some unmissable experiences. There’ll be live music performances from acts like Dublin City Rounders and The Shadow Shakers over the weekend in Bison while some of Ireland’s finest up and coming DJ’s get the party started upstairs on the Workman’s terrace from early on. Once again we will be hosting a series of whiskey tasting masterclasses along with a live whiskey barrel charring demonstration with Jameson Black Barrel. New for 2023, the Craic Den Comedy Club will be putting on a series of mini comedy shows, as well as a pop-up tattoo artist Cailin Finnie (@cail_ink), caricature drawings, a wheel of fortune with brilliant prizes, and so much more!
We’re kicking off at 4pm on Friday and 12pm on Saturday. Attendance is totally free, and walk-ins are welcome across the weekend, but the first 100 people to register online in advance will receive a complimentary Bison Buck (worth €10!), redeemable against a Jameson cocktail or a Bison Bite food item all festival long.

Bison Bar was the first original BBQ joint in Dublin. We wanted to bring all the smoky BBQ flavour from Southern America to the streets of Dublin. We sent our team of chefs to the states to learn about the craft of BBQ. They spent weeks traveling the southern states from Memphis to Texas to really master the BBQ craft (tough gig!). As well as learning all the secrets and crafts to BBQ, it was there we picked up our secret weapon- our Southern Pride Smoker. The smoker was so big that we weren’t able to get it through the door, so we had to take down the wall to get into the kitchen. Talk about dedication! We then spend 6 weeks trialling and perfecting our meat selection before serving. We treat all our meats with homemade rubs and smoke them for 14 hours over specially selected charcoal before serving. We are dedicated to our trade and the art of BBQ and are proud to have been serving Dublin’s finest BBQ since 2012.
Back in 2017 Adam started his YouTube Channel ‘Shropshire Lad’ after being convinced to do so by a friend, showcasing his outdoor cooking adventures in Shropshire. Five years on, what started out as simply sharing his passion for cooking with fire, quality local ingredients, and of course Shropshire and it’s incredible food scene, has become his fulltime profession since making the tough decision to finish his career as a Youth and Community Worker back in February 2022.
Adam has now established a solid reputation as a live fire chef nationally, delivering pop ups and events, hosting and demonstrating on fire cookery stages across the UK, delivering regular public classes in the art of cooking with fire, building a following across multiple social media platforms and making several television appearances. These include winning Heston Blumenthal’s show ‘Crazy Delicious’ on Netflix and channel 4, a guest slot on Nadia Hussein’s show ‘Fast Flavour’ and more recently as a critic on MasterChef the Professionals where he was described as ‘one of the leaders in the UK street food and pop-up scene’.
Adam’s style is to ‘not mess about’ and simply take the best of the ingredients available, allow bold natural flavours to collide and then introduce them to the fire to, ‘elevate flavours once again’.
